More Than Flavors: The Story Behind Archie’s Wok

Our story is much more than great flavors. It began in 1978, when Archie was invited to become the private chef of renowned Hollywood director John Huston, at his personal retreat on the southern coast of Banderas Bay.

Accessible only by sea, Las Caletas was a jungle hideaway by the ocean where Huston welcomed guests from all walks of life. It was there that Archie set his table for an extraordinary range of visitors — from locals arriving through the jungle, to Mexican artists, his eclectic family, Hollywood friends and collaborators, Mexican filmmakers, French winemakers, and members of the English nobility.

Today, Archie’s Wok remains a deeply personal project — a true labor of love now guided by his wife Cyndi, his daughter Kiyoki, and his son Sergio. 

Kiyoki brings a warm sense of hospitality as she welcomes guests into our cozy and elegant dining room.

Sergio leads the kitchen operations, personally selecting the freshest seafood, meats, and vegetables from the region each day, which are then transformed in the wok and on the grill into exquisite Asian-inspired dishes. 

His cuisine is enriched with a selection of locally grown tropical herbs and spices, such as kaffir lime, galangal, lemongrass, ginger, chilies, tamarind, and coconut milk — essential ingredients in both Asian cuisine and the Mexican coast.

 

The tradition of sharing food family-style evokes those early days when Huston and his guests gathered around the table, enjoying together an abundance of flavors that created a generous and memorable experience.
